Mate Mate tea used to be the traditional beverage of the gauchos, and was consumed around the campfire. Over time, it developed into the national beverage of the South American countries. It is produced from the leaves of the holly (ilex paraguensis St. Hill), which after drying are ground or roughly pounded. The slightly caffeinated mate tea is available in green or roasted varieties.
