Comparatively high quality teas, only available in limited quantities, are produced by hand.
In some instances, they are even only produced to order
 
 
Production steps:

a) Picking of fresh leaves
b) Cooling/airing of leaves for about 1 hour
c) Oxidation for 5-10 min at a temperature of around 180°C and dry heat
d) First rolling cycle, lasting about 10 min
e) First drying cycle, lasting about 8-10 min at a temperature of 110°C-130°C
f) Second rolling cycle, also lasting about 10 min
g) Second drying cycle, also lasting about 8-10 min at a temperature of 90°C-110°C
h) Shaping
i) Blending and packaging

If the manufacture of the tea is done entirely by hand, the oxidation is followed by:

a) First drying cycle, lasting about 8-10 min at 110-130°C
b) Drying and rolling by hand in iron pans at about 80°C
c) Cooling
d) Second drying and rolling by hand at about 60°C
e) Cooling
